The hollick family welcomes visitors to its modern cellar door facility. As well as the outstanding wines on offer, visitors can purchase 'upstairs' produce, such as balsamic glaze and chardonnay lees mustard which have been prepared by the chefs. An extensive selection of hollick wines are available for tasting at all times including wines that are only available at the cellar door such as the frizzant and pinot noir. The building features local limestone and red gum and floor to ceiling windows allow views into the barrel shed. The complex incorporates a restaurant, "upstairs at hollick", the first winery restaurant in the limestone coast. A range of riedel glassware is also available.

Coonawarra is renowned as one of Australia's choice wine regions and is particularly known for producing world class red wines, especially Cabernet Sauvignon. The wealthy red Berra rossa soils over limestone, spotless underground water and a lengthy cool ripening season for the grapes yield wines of elegance and longevity.

In 1974 Ian rollick purchased a piece of grazing land on the southern last of the Coonawarra district. This little block of land was one of the creative allocations in the Coonawarra Fruit Colony which John Riddoch founded in 1890. It was never developed as a fruit block, but instead was the site of a tannery, and later a dairy farm. Ian rollick's involvement with viticulture goes way back to his childhood in Mildura as the son of a soldier settler fruit blocker. Cellar Door sales were carried out in the cottage until 2002 when a new cellar door sales area and restaurant (Upstairs at rollick) were built to fulfill the demand for a winery restaurant in Coonawarra. The integration of impaired and fresh has been outstandingly triumphant making rollick a must see’ in Coonawarra. Demand for the rollick product was such that expansion was necessary, and in 1987 Ian and Wendy rollick purchased the nearby Wilgha vineyard, to supplement their existing production. Ian's expertise in viticulture has seen him as an industry leader, both within the Coonawarra, and in the broader Australian wine industry, with over ten years’ experience on various State and Federal bodies. With over 40 years’ service to both the wine industry and local community, Wendy rollick was awarded the highly regarded title of Patron of Coonawarra in early 2016. Not only was she recognized for her contribution within the family wine business, but also for her commitment to wine and food education, and to the regional and state wine community. With wine in their blood Ian and Wendy’s daughters Mel and Kate have both spent time in management roles at rollick and their important contribution to the business across sales, marketing and the running of Upstairs at rollick is portion of the family legacy.
